200 g Birria beef, shredded (prepared from slow-cooked beef with spices)

100 g cheese (e.g., Oaxaca or mozzarella, grated)

4 slices of sourdough or Texas toast

1 tablespoon unsalted butter

1 tablespoon olive oil

1 small onion, finely chopped

1 jalapeño, finely chopped (optional for extra heat)

Fresh cilantro, chopped (for garnish)

1 cup consomé (broth from the birria) for dipping

Salt and pepper to taste

Prepare the Birria: If you haven’t already made birria, slow-cook beef with spices like cumin, oregano, garlic, and bay leaves in a rich broth until tender. Shred the beef and set aside.

    Sauté Onions: In a frying pan, heat olive oil over medium heat. Add chopped onions and jalapeños; sauté until softened and slightly caramelized, about 5 minutes. Season with salt and pepper.

      Assemble Sandwich: On one slice of sourdough bread, layer a generous portion of shredded birria followed by a handful of grated cheese and some sautéed onion mixture. Top with another slice of bread. Repeat for the second sandwich.

        Grill the Sandwich: Heat a non-stick skillet over medium heat and melt half the butter. Place the sandwich in the skillet and grill until the bread is golden brown and crispy, about 3-4 minutes per side. Add the remaining butter before flipping to ensure even browning.

          Serve: Once both sides are golden and the cheese has melted, remove from the pan and let it rest for a minute. Cut the sandwiches in half for a better presentation.

            Prepare Consomé: Warm up the consomé in a small saucepan. This will serve as a dipping sauce.

              Garnish: Serve the grilled cheese sandwiches with the warmed consomé on the side for dipping and sprinkle fresh cilantro on top for a burst of freshness.
