6 Irish sausages (bangers)

4 large potatoes, peeled and cubed

1 cup beef broth

1 cup Guinness stout (non-alcoholic version recommended)

1 medium onion, thinly sliced

3 cloves garlic, minced

1 tablespoon butter

1 tablespoon olive oil

½ cup heavy cream

Salt and pepper to taste

Fresh parsley, chopped for garnish

Sausages Cook: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides, about 8–10 minutes. Remove from the skillet and set aside.

    Onion and Garlic: In the same skillet, add the butter, sliced onions, and minced garlic. Sauté until the onions are soft and caramelized, around 5–7 minutes.

      Deglaze: Pour in the Guinness stout, scraping up any browned bits from the bottom of the skillet. Allow it to simmer for 3–4 minutes to reduce slightly.

        Add Broth: Add the beef broth, bringing it to a gentle simmer. Return the sausages to the skillet, cover, and let it simmer for 15 minutes until the sausages are cooked through and the flavors meld.

          Mash Potatoes: While the sausages are simmering, boil the cubed potatoes in a pot of salted water until tender, about 15 minutes. Drain the water, then mash the potatoes with the heavy cream. Season with salt and pepper to taste.

            Serve: On each plate, create a bed of creamy mashed potatoes, lay the sausages on top, and drizzle the Guinness gravy over the dish.

              Garnish: Sprinkle with fresh chopped parsley for a pop of color and extra flavor.
