4 chicken breasts

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small red onion, minced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon paprika

Salt and black pepper to taste

1 cup salsa (mild or spicy, depending on preference)

1 cup shredded cheese (cheddar or Mexican blend)

2 tablespoons olive oil

Fresh cilantro for garnish

Preheat your oven to 190°C (375°F).

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red onion, sautéing for about 2 minutes until fragrant.

      Add the diced red and yellow bell peppers to the skillet and cook for another 5 minutes until softened.

        Stir in the black beans, corn, cumin, chili powder, paprika, salt, and black pepper. Cook for an additional 3 minutes, then remove from heat.

          Season the chicken breasts with salt and pepper on both sides. In a large oven-safe baking dish, place the chicken breasts side by side.

            Top each chicken breast with the bean and corn mixture, spreading it evenly. Pour salsa over the top of the chicken and vegetable mixture.

              Sprinkle shredded cheese generously over everything.

                Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                  After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the chicken is fully cooked (internal temperature should reach 75°C/165°F) and the cheese is melted and bubbly.

                    Once done, take the dish out and let it rest for 5 minutes. Garnish with fresh cilantro before serving.
