1 can (400g) mixed beans (kidney, cannellini, and black beans), drained and rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup diced zucchini

1 bell pepper (red or yellow), chopped

1 can (400g) diced tomatoes

4 cups vegetable broth

2 teaspoons dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley or basil for garnish

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.

    Add the minced garlic and sauté for another minute until fragrant.

      Stir in the diced carrots, zucchini, and bell pepper. Cook for about 5-7 minutes until the vegetables start to soften.

        Add the mixed beans, diced tomatoes, vegetable broth, dried oregano, ground cumin, and smoked paprika to the pot.

          Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, allowing the flavors to meld.

            Season with salt and pepper to taste. If you prefer a thicker soup, you can use an immersion blender to blend a portion of the soup, then stir it back in.

              Remove the soup from heat and let it cool slightly before serving.
